Beet Tahini Salad

We have a pretty fun and delicious salad recipe for you. It will pair beautiful with a Riesling.
For the Tahini:
- 1 cup of Tahini
- 3 garlic cloves
- 3/4 cup of water
- 1/3 cup fresh lemon juice
- 2 medium sized cooked beets cut roughly into pieces
- Salt to taste
Blend all of the ingredients into a smooth puree.
Toppings:
- 2 cooked beets cut in small wedges
- Arugula
- Thin Slices of 1 Radish (Watermelon or your favorite)
- Poppy seeds
- Olive oil to taste
- Salt to taste
Plating
In a pretty plate spread the beet tahini, place the pieces of beets, decor with the radishes, sprinkle some poppy seeds, a small bunch of arugula on top and finish it with a pinch of salt and olive oil!
