Grape: 100% Tinta de Toro, one of the many synonyms for Tempranillo, the great grape of Spain. Tinta de Toro is the name used in the region of Toro, in central Spain. Though this region is relatively new there are some wonderful examples of Tempranillo being produced here, usually with a level of richness that is hard to acheive in the more northerly region of Rioja (WineGeeks).
Production: 10 - 14 days in stainless steel tanks at 78.8 ºF.
Pairing: Red meats and game, cured cheese, stew.
Temperature: Drink at 60°F-64°F.
