Grapes: Fiano
Ageing: 1 month in stainless steel and 8 months in bottle.
This wine has skin contact for 10 days. Very light and easy to drink; fresh on the palate, lots of minerals and stone. Complex and savoury, with an excellent balance between the fresh structure of the Fiano and the more tannic elements of the skin contact. Delicious.
Nerina and Pierluigi started this adventure in 1977 growing grains and tomatoes. In 2002 they also planted Fiano in those black volcanic soils. Certified organic.
Because of the windmills up the hill this wine is called Don Chisciotte, in reference to Don Quijote de La Mancha.

43 number on the wine name: After more than twenty years of research, the creation of the first edition of ‘La Quadratura del Cerchio’ in 1995, finally identified a special terroir consisting of  small plots of land , extraordinary vineyards, complex soils and particular climatic conditions that run along  the imaginary line along the 43rd  parallel.  The 43rd parallel encompasses land and sea and the heat and the cold and is both magical and mystical, historical and modern passing  through Georgia, which is known as  the ‘cradle of wine’, Medjugorje, Santiago de Compostela, the famous destinations for pilgrimage, and finally terminates in Oregon, the new American frontier.
