Sinols is a union of feelings in an attempt to make art with the grapes of this privileged place. Our wish is to convey to those who try it not only sensations that are pleasing to the senses, but also the spirit and strength of the elements of this land.
Decanter 87 points- Bronze medal.
Region: Girona, Spain.
Grapes: 40% Grenache, 40% Carignan and 20% Merlot.
Tasting: Intense, bright red hue with purplish tones. Powerful aromas of ripe fruit, such as blackberries and cherries, along with liquorice and pepper notes. Big on the palate with well-structured, smooth tannin, and a long finish which replays the intense fruit and liquorice aromas found on the palate.
Pairing: Ideal for accompanying meat and hearty dishes, stews, casseroles, blue fish, sea urchins and semi-cured cheeses.
Temperature: Best served between 15° and 17°C.
Vineyard: Vineyards within the Empordà D.O. The Garnacha and Samsó vineyards grow on slate slopes located near the villages of Palau Saverdera, Vilajuïga and Garriguella. The Merlot vineyards grow in the alluvial soils found near the villages of Pau and Vilajuïga.
Production: The grapes are harvested in September and alcoholic fermentation takes place at a temperature of 24°C for a duration of 10-15 days. The maceration period, during which continuous pumping over operations are carried out, lasts between 15 days. Its exact duration is dictated by our oenologist, who carries out tastings to determine the desired amount of tannin. When this is completed, malolactic fermentation is carried out in concrete tanks. The wine stays a short period of time in the concrete tanks, just few weeks, after this period, the wine is bottled.
