Grape: Cabernet Sauvignon, a red grape varietal known for its thick, durable skin, and the vine’s resistance to the elements. As a wine, Cabernet Sauvignon is known for its dark color and full body. The wine is dry (not sweet) and has a healthy level of tannin, which is why your mouth dries out when you sip it.
Palate: Fruit forward with a supple, elegant finish. Dark berry fruit with a hint of oak. Blackberry and currants with a nice even mid-palate that ends with a dark round finish.
Aroma: Nose with blackberry, anise, vanilla and a little heat.
Pairing: This is a Cab to enjoy on Tuesday night with take-out or pasta with rich meat sauce; to enjoy again with friends on Saturday night with soft cheeses and braised meats.
