Grapes: Tempranillo.
Tasting: Very intense cherry red with garnet hues. Bright and clean.
Aroma: Attractive bouquet, black and red ripe berries, sweet spices (cinnamon, vanilla and black pepper), hints of dark chocolate, balsamic aromas dairy and slightly toasted notes. Complex and mature aromas.
Palate: Well delineated palate, superb acidity with mellow and creamy tannins but still a solid mid palate. Savoury wine.
Pairing: Red meats and game. Surprising accompanying a dessert or in the after lunch.
Production: Sorting table for all harvest, destemming without crushing. Pre-fermentative cryomaceration at 41°F for 5 days, then comes the alcoholic fermentation at 82°F for 18 days. Time in barrels: 28 months (100% new specially selected French oak).
