Pairing: Main dishes of Mediterranean and ethnic gastronomy, grilled pork chops or grilled tuna steaks.
Production: Pre-fermentative cryomaceration at 41°F. The fermentation is made in stainless steel tanks. Optimum period of consumption: between the second and sixth year.
