Cultivation: Ploughing of soils, we practice “lutte raisonnée” rational vine management with minimal use of chemicals.
Picked by hand in small 13 kg crates.
The grapes are selectively sorted by hand.
Slow pressing for gentle extraction of the juice.
Cold settling, fermentation with natural yeasts and temperature regulation, in oak casks for 40 to 80 days.
In oak casks for 12 months.
Fining, cooling and filtration before bottling.
Tasting notes Colour: pale gold with green reflections. The bouquet is swept with green almond, beeswax and notes of coffee roasting. It fills the palate with its round texture accompanied by mineral and lemony notes
