The Story Behind the Wine:
Roberto Cipresso is one of Italy's most respected winemakers, known for his deep connection to the land and his minimal-intervention approach. With over 30 years of experience, Cipresso has been crafting exceptional wines in Montalcino, and his Rosso di Montalcino is often referred to as the “Baby Brunello.” This nickname comes from the fact that Rosso di Montalcino is made from the same 100% Sangiovese grapes used in Brunello, but it is designed to be enjoyed younger. Despite this, Cipresso's Rosso benefits from the same meticulous care as a Brunello.
Cipresso’s production is deliberately small, as he focuses on quality over quantity, producing only a limited number of bottles each year. This allows him to ensure that each wine expresses the unique terroir of Montalcino. Cipresso’s hands-on approach, from vineyard to cellar, is a key reason why his wines are so sought after.
The 2019 vintage was aged for 18 months in French oak barrels, 50% new and 50% second-use, adding layers of complexity without overwhelming the fruit. The 1.5L magnum size of this bottle is not just for show—it’s widely regarded as the best size for aging wine. Larger bottles age more slowly, allowing the wine to develop more gracefully over time, preserving its freshness and structure for longer periods.
Perfect Pairings:
- Pasta Dishes: Pairs beautifully with rich pasta like pappardelle with wild boar ragu.
- Meats: Ideal with roasted lamb or beef.
- Cheese: Pairs well with aged cheeses like Parmigiano-Reggiano.
Winemaking & Terroir:
Cipresso’s vineyards are located in the Sant'Antimo area of Montalcino, where the iron-rich soils and high altitude (350 meters above sea level) contribute to the wine’s vibrant acidity and unique minerality. The grapes are hand-harvested and carefully aged in oak, which enhances the wine’s earthy, spicy character.
